Saturday is the hardest seat in New York to walk into, so tonight's five don't fight the book: three of them take no reservations at all, and the other two hold the counter and part of the room back for the door.
We never hold, resell or book a table. Availability moves minute to minute, so go early rather than late.

The Raoul's team's all-day French diner across the street, where the menu runs from omelets to coq au vin and a green chile cheeseburger. A room opened as the walk-in answer to its much harder neighbor.

Their own site prints "Walk-in only" under the weekly hours grid, with Saturday 11am to 10pm.

Sam Yoo's diner in the shadow of the Manhattan Bridge — the honey-butter pancakes are famous, but the kitchen runs a full dinner service to ten in a room of just 28 seats.

Their own FAQ: "We accept walk-ins during all business hours. We hold all our counter seats and a handful of tables for walk-in diners." Their site lists "Open Daily 9am—10pm".

Chinatown
A Cantonese institution at Bayard and Bowery since 1981 — roast meats with the ginger-scallion sauce, shrimp wonton soup, and salt-baked soft-shell crabs while the season holds, at tables that turn fast. Bring cash.
walk in — no reservations are taken at all, first come, first serve
Their own site: "We operate on a First-Come, First-Serve Basis and do not take reservations." (It also says: cash only, no credit cards.)

Egyptian seafood on Steinway Street: you pick your fish from the iced display, tell them how to cook it, and eat it at butcher-paper tables. Barebones, generous, worth the train.

Eater NY's dining report: "walk in, head to the iced seafood display at the counter, point to the fish and crustaceans you want to eat." The room has no site of its own — the counter runs it.

Taiwanese-American cooking in a bright corner room at Graham and Scholes — pig head, beef noodle soup, and booths and bar seats to hold it all.
walk in — walk-ins welcome, and they only seat complete parties
Their own site: "walk-ins welcome. please note, we only seat complete parties," with dinner Tuesdays to Saturdays 5:30pm to 11pm. Standard reservations also exist, so the unbooked share of the room is the way in.
