Each one carries the way in, the line that policy comes from, and the night we last looked. 11 of the 25 keep no book at all, which is the most reliable kind of table in this city: nothing to be full of.
A guide is a record, not a promise. Doors change, rooms close for a private party, and hours move with the season — check theirs before you put your coat on. We never hold, resell or book a table.

Aria
West Village
A narrow room at the quiet south end of Bedford Street, lined with bottles and lit low. Italian small plates and honest glasses, the kind of place a block keeps to itself.

Their own site lists Sunday hours of 11:30am to 11pm and carries no booking page or reservation link anywhere. It is a small room, so earlier is easier.
The Long Island Bar
Cobble Hill
A 1951 bar on Atlantic Avenue restored down to the neon, the chrome and the butterscotch booths. Toby Cecchini's daiquiris, a serious burger, and no reason at all to hurry.

Bar Pisellino
West Village
A curved marble bar under warm light, where a negroni, some spuntini and a dolce make dinner. Rita Sodi and Jody Williams built it for lingering, on a tree-lined corner by Christopher Park.

Hotel Delmano
Williamsburg
Antique mirrors, candles and a marble bar that curls through two rooms, with oysters, tartare and a hundred wines. It is the darkest room on this list and the one to stay in late.

Their own site lists Saturday hours of 2pm to 2am and carries no booking page or reservation link anywhere. Food here is a raw bar and small plates, not a full dinner.
Rhodora Wine Bar
Fort Greene
A low wooden ceiling with dried flowers hanging off it, marble tables, exposed brick, and natural wine poured all evening. It is small enough that the room fills with one conversation, and nobody there is in a hurry.

Cervo's
Chinatown
Iberian seafood on a narrow stretch of Canal Street, with a bar that spends the evening reworking old cocktails. Through October the dinner tables are out on the pavement, which is the best seat they have.

Their own site: outdoor seats on Canal Street are "always first come first serve for walk in only" through October. They also save indoor room for walk-ins. Open every night 5:30pm to 11pm.
The Ten Bells
Lower East Side
A dim natural-wine den that has been on Broome Street since 2008, with oysters and a happy hour running to 7pm. It stays open to 1am on a Friday, so a late table for 2 is a real option.

Their booking page offers no party smaller than 4, so a two walks in. Friday hours 5pm to 1am, per their own site, checked again at midday.
The Snail
Greenpoint
A small American bistro with a short bar at the front where people wait with a glass of wine, and a dining room kept soft and low behind it. It has the unbothered feel of a place the whole city has not got to yet.

Lucky Charlie
Bushwick
A coal-oven pizza room down in a basement that feels older than the block above it, signed ballpark photographs on the walls and Rat Pack records low over the tables. There is a bar along one side that pours long after the neighborhood has gone quiet.

Le French Diner
Lower East Side
Ten stools wrap an open kitchen, and there are three tables behind them. French, close, and lit like someone's apartment at midnight.

Prosciutto
East Village
Eight tables and a short counter, pasta made in the room, nothing about it trying to be fancy. The kind of small that makes two people talk quietly.

Their own site says "walk-ins only" and lists dinner nightly at 435 East 9th Street. The Infatuation's date-night guide says the same.
Walk in, or book — both work
These keep a book and still say the door is welcome. When the book is full, the counter usually is not.
Uva
Upper East Side
An Italian wine bar on Second Avenue with a glassed-in back garden strung with vines and small lights. Deep by-the-glass list, plates made for sharing, and a room that lets two people talk for hours.

Their own site: "We welcome walk-ins every night of the week and reservations can be made via Resy." Sunday 11am to 1am.
Ruffian
East Village
Twenty-odd seats along a counter on East 7th Street, pouring Georgian, Greek and Austrian bottles by candlelight. Small plates arrive built around whatever they have opened for you that evening.

Their own site invites you to "drop in for a glass" and lists Sunday hours of 3pm to 10:30pm. Bookings exist as well, so the counter is the door.
Roman's
Fort Greene
A short menu on DeKalb Avenue, rewritten every afternoon around whatever the farms sent that morning. Warm wood, a bar you can eat dinner at, and wine that leans natural without lecturing.

Their own site: "Reservations available via Resy, and we always welcome walk-ins." Sunday dinner 5pm to 10:30pm.
Bar Kabawa
East Village
A small Caribbean daiquiri and wine bar on Extra Place, dark and low, with patties and a raw bar. Short list, short menu, and the counter is where two people should sit.

Their own site: "While we do offer reservations each night, we save room for walk-ins too." Open Saturday 5:30pm to 12am.
Bar Vinazo
Park Slope
A Spanish wine bar with a 14-seat bar and a back garden, pouring sherry and vermouth by the glass. Tinned fish, tortilla and a room that rewards sitting for two hours.

Their own site: "Our 14 seat bar and a portion of our back garden are available for walk-in diners on a first-come-first-served basis." Saturday 3pm to 11pm. The garden is uncovered and unheated. We are not linking their site tonight because it has been taken over by someone else. The room is fine.
Anton's
West Village
A cosy dining room in an 1850s Greek-revival house on Hudson Street, with a bar and a sidewalk patio. Unhurried, old-school, and four blocks from Bar Pisellino if this door is full.

Bunny
Bedford-Stuyvesant
A couple from Istanbul and Hamburg cook and serve a Turkish-German menu in a candlelit room on Nostrand Avenue. He cooks, she serves, records play, and the bar is where you want to sit.

Clinton Hill
A Clinton Hill wine bar leaning Catalan and southwest French, with seasonal small plates built for sharing. Anchovies, mortadella, sourdough and olive oil, and a list you can sit with for two hours.

Bánh Anh Em
East Village
A narrow Vietnamese room with the kitchen open at the back and a counter facing the cooks, so the char and the turmeric reach you before the menu does. Close quarters, a handful of two-tops, and enough movement that two people at the counter feel part of it.

Emilio's Ballato
Nolita
A room barely wider than a hallway, dim the way a room gets dim from age rather than design, with photographs of old regulars crowding every inch of wall. The murmur and the glassware have sounded the same in there for decades.

Bar Pitti
Greenwich Village
A yellow awning, sidewalk tables spilling towards Sixth Avenue, and inside a tight room of paper tablecloths and black-and-white photographs. It runs on a chalkboard and a host who reads the line at a glance.

Fort Greene
Wood panelling, harbour lamps, white cloths on the tables. The tavern side stays low and warm long after the kitchen gets busy.

Chinatown
Twenty-eight seats on the bend of Doyers Street, the pedestrian block nobody walks by accident. Wine, regional Chinese plates, and a room that stays quiet.

Hudson Square
Candlesticks that have dripped down onto the bar, good wine by the glass, a British pub with the lights kept low. Eight seats at that bar.

How to actually walk in
Six things we have learned doing this every evening at 6pm.
Go before 7pm
The hour between 5:30pm and 7pm is the loosest door in New York. By 8pm the same room has a line, and the line is your evening.
Ask for the bar, not a table
Two seats at a counter open far more often than a two-top does. Most kitchens serve the full menu there, and the bar is where a room is warmest anyway.
Sunday and Monday are soft
The rooms that are impossible on Friday are quiet at the start of the week. If a place has been on your list for a month, go on a Sunday.
Give your name and go for one drink
A 40-minute wait is not a no. Leave a phone number, walk to the nearest bar, and let the wait be the first part of the night.
Two is easy, four is work
Almost every room on this page can seat two tonight. For four, call ahead and ask what time the door is realistic, then arrive ten minutes before it.
Call if it matters
A room with no booking page also has no way to tell you it is closed for a party. Thirty seconds on the phone beats a walk across two neighborhoods.
