In these rooms the bar or the counter is where dinner happens, and it is first come, first served.
Eight of them, across eight neighborhoods in Manhattan and Brooklyn, pulled from every night we have published. Each one carries the way in, the line that policy comes from, and the night we last looked. The bar is the most reliable seat in this city — usually the warmest one too, and at more than one of these rooms the full menu lives there.
A guide is a record, not a promise. Doors change, rooms close for a private party, and hours move with the season — check theirs before you put your coat on. We never hold, resell or book a table.

Raoul's
SoHo
A 1975 French bistro with red banquettes, a tin ceiling and a bar where the burger au poivre actually lives. Sit at the bar with two martinis and you have the best seat in the room.

Their site: "The bar is seated on a first come, first served basis at all times", open 7 days for dinner with the bar at 5pm and kitchen at 5:15pm; the burger au poivre is bar-only, 12 a night.
St. Anselm
Williamsburg
A candlelit steakhouse in an old brick room on Metropolitan Avenue, all wood smoke and white cloths. Order the steak for 2 and let the room take the evening from there.

Their own site: "We accept walk-ins so feel free to come in (first come, first served)." Monday to Friday 5pm to 11pm.
Ruffian
East Village
Twenty-odd seats along a counter on East 7th Street, pouring Georgian, Greek and Austrian bottles by candlelight. Small plates arrive built around whatever they have opened for you that evening.

Their own site invites you to "drop in for a glass" and lists Sunday hours of 3pm to 10:30pm. Bookings exist as well, so the counter is the door.
Bar Vinazo
Park Slope
A Spanish wine bar with a 14-seat bar and a back garden, pouring sherry and vermouth by the glass. Tinned fish, tortilla and a room that rewards sitting for two hours.

Their own site: "Our 14 seat bar and a portion of our back garden are available for walk-in diners on a first-come-first-served basis." Saturday 3pm to 11pm. The garden is uncovered and unheated. We are not linking their site tonight because it has been taken over by someone else. The room is fine.
Bunny
Bedford-Stuyvesant
A couple from Istanbul and Hamburg cook and serve a Turkish-German menu in a candlelit room on Nostrand Avenue. He cooks, she serves, records play, and the bar is where you want to sit.

Lucky Charlie
Bushwick
A coal-oven pizza room down in a basement that feels older than the block above it, signed ballpark photographs on the walls and Rat Pack records low over the tables. There is a bar along one side that pours long after the neighborhood has gone quiet.

Wood panelling, harbour lamps, white cloths on the tables. The tavern side stays low and warm long after the kitchen gets busy.

Candlesticks that have dripped down onto the bar, good wine by the glass, a British pub with the lights kept low. Eight seats at that bar.

How to get the bar seat
Four things we have learned doing this every evening at 6pm.
Arrive before 7pm
Bar seats are the first seats to fill. Between 5:30pm and 7pm the counter is mostly yours; by 8pm you are reading a menu standing up.
Say bar, not table
Ask for the bar seats by name. A host defaulting to a waitlist time will often seat you straight away if the request is specific.
Two is the right number
Bars seat pairs and almost never fours. If there are more of you, take the room’s own advice — most of these have a booking page for exactly that.
Eat the whole menu there
At several of these rooms the bar is not the consolation prize — the burger, the tartare, the tasting menu are served nowhere else. Ask what is counter-only.
