Each one carries the way in, the line that policy comes from, and the night we last looked. The bar is the most reliable seat in this city — usually the warmest one too, and at more than one of these rooms the full menu lives there.
A guide is a record, not a promise. Doors change, rooms close for a private party, and hours move with the season — check theirs before you put your coat on. We never hold, resell or book a table.

Their about page says they “mostly save room for walk ins at our tables and bar”. Sunday–Thursday hours run from 5:30pm until 11pm; no separate kitchen cutoff is stated. Indoor reservations are offered for parties of 8–20 year-round. The page describes patio dinner from April through October; we are recommending indoor seats, not outdoor service tonight. A couple from Istanbul and Hamburg cook and serve a Turkish-German menu in a candlelit room on Nostrand Avenue. He cooks, she serves, records play, and the bar is where you want to sit.

The hand-pulled noodle counter on North 8th — biang biang noodles with chili oil, spicy cumin lamb, stewed oxtail, in a fluorescent room that does not care about your plans. Arrive before 9: the kitchen closes early.

The team takes a name and cell number, estimates the wait and sends updates. Guests seeking a full meal get priority over drinks-only walk-ins. Indoor and yurt dining also take reservations. A soaring former glass factory on Onderdonk Avenue, wood-fired everything — the patty melt has a cult, the pastas change with the market, and the room hums like a neighborhood that got lucky. The trek to Ridgewood is the price; the table is the reward.

The Eldridge Street counter that made the dollar-sign dumpling a New York institution — blistered pork and chive dumplings fried to order, sesame pancakes stuffed at the griddle, a line that moves like clockwork. Eat at the window counter or carry the bag to Columbus Park.

A coal-oven pizza room down in a basement that feels older than the block above it, signed ballpark photographs on the walls and Rat Pack records low over the tables. There is a bar along one side that pours long after the neighborhood has gone quiet.

Twenty-odd seats along a counter on East 7th Street, pouring Georgian, Greek and Austrian bottles by candlelight. Small plates arrive built around whatever they have opened for you that evening.

Their own site invites you to "drop in for a glass" and lists Sunday hours of 3pm to 10:30pm. Bookings exist as well, so the counter is the door.

How to get the bar seat
Four things we have learned doing this every evening at 6pm.
Arrive before 7pm
Bar seats are the first seats to fill. Between 5:30pm and 7pm the counter is mostly yours; by 8pm you are reading a menu standing up.
Say bar, not table
Ask for the bar seats by name. A host defaulting to a waitlist time will often seat you straight away if the request is specific.
Two is the right number
Bars seat pairs and almost never fours. If there are more of you, take the room’s own advice — most of these have a booking page for exactly that.
Eat the whole menu there
At several of these rooms the bar is not the consolation prize — the burger, the tartare, the tasting menu are served nowhere else. Ask what is counter-only.
