A lantern-lit basement off Herald Square pouring highballs over karaage, tuna tataki and uni-topped rice — the Hand Hospitality group's gentlest room, all of the craft and none of the fuss. Thursday dinner in Midtown without a single hotel-bar markup.

Their own Resy page states "We are accepting 75% of our capacity for walk-in parties on a first-come, first-served basis," loaded tonight with the 1 October dinner slots showing.

The Eldridge Street counter that made the dollar-sign dumpling a New York institution — blistered pork and chive dumplings fried to order, sesame pancakes stuffed at the griddle, a line that moves like clockwork. Eat at the window counter or carry the bag to Columbus Park.

The Mott Street classic that opens with the morning papers and runs until late — roast duck in the window, congee that fixes everything, wonton noodles and shrimp with walnuts at bright formica tables. Chinatown at its most straightforward and its best.

Kips Bay
The Third Avenue deli-diner that has fed the neighborhood since 1964 — matzo ball soup, a triple-decker brisket club, corned beef carved to order among booths and brass. The old New York supper hour without a single gimmick.

The MacDougal Street bowl-shop that owns the Village's value-eating line — lemongrass pork vermicelli, pho with rare beef, Vietnamese coffee in a crush of student noise. Cheap, fast and fragrant, a block off Washington Square.
